Sunday Funday: Cooking All the Produce

I drove back from the beach early today yesterday. I chose early because I wanted to be home in time to see the Ravens v. Texans game. Turns out, I should have probably just stayed at the beach and enjoyed this beautiful day. Oh Ravens. Just hang in there and don’t get hurt. That’s my only wish for you all.


While I left sunny, clear-skied Fenwick Island early, I didn’t leave so early that I wasn’t able to stop at the Eastern Shore’s best produce stand. Enter Little Wagon Produce aka the best corn-on-the-cob, the best produce, the best family owners, and the best pumpkins/gourds/squash. Which is totally relevant to bring up because it’s fall!

For no more than $20 I purchased:

  • kale
  • turnips
  • sweet potatoes
  • tomatoes
  • green peppers
  • red peppers
  • butternut squash
  • acorn squash
  • spaghetti squash
  • onion
  • arugula
  • cucumber
  • eggplant
  • cauliflower
  • three mini pumpkins (one orange, two white)
  • five hot peppers

Good God do I love me some produce.

Ok, so once I bought all the goods, I decided that the only way to make sure I got my diet back on track and actually ate all this delicious goodness was to prep, plan, and cook on Sunday. So many people do this every week, so I thought, “Let me just try it this once and see what happens.” Turns out, not so hard. (Especially when the Ravens are doing so poorly.)

So to prep, I roasted my spaghetti and butternut squashes, kale (so I could turn some of it into kale chips!), some sweet potatoes so I could mash ’em up, and I made some Diner Meatloaf ‘Muffins’ – recipe courtesy of BD (by way of Cooking Light.) First off, I’m not a fan of meatloaf… AT ALL. So I have no idea where this craving for meatloaf came from. But I have to surrender to it, so here I am, blogging about meatloaf.

Diner Meatloaf Muffins

ADORABLE. And they tasted pretty good. It’s a basic recipe, so the next time I make them, I’ll add more veggies, use oats instead of crackers, and tomatoes instead of ketchup… too sweet with ketchup!

So onto my next project: Does anyone have a good suggestion for my turnip leaves?

I like my turnips roasted, but I want to try the leaves out this time around. Should I just treat them like any other green? Help!

    Firstly – YUMMM!!!!

    Secondly, Ben’s flag football team this year is the Ravens. I’ll send you a pic of him in his uni.

    Thirdly, this is a recipe I have used in order to incorporate the turnip greens. And btw, to compensate for the exceedingly healthy nature of this dish, I may or may not include a little bit of fresh parmesan cheese. Just sayin’….

      • Much to our chagrin, he has become a fan of the Washington sports football team with the politically incorrect name. It’s peer pressure from down here. His loyalty lays with the Bills and Bears (for Dave’s sake), but the only song he knows is Hail to the Chiefs… 😦 We try to get him to support Ravens when there isn’t an apparent conflict, but I think it’s getting a little confusing for him. 🙂

          poor little Ben! I can imagine how confusing it is for him. If the Washington team had a less-offensive name, I could totally support the fandom. Oh Washington!
