Lamb and Israeli Couscous and Cucumber Salad OH MY

Last night, I made this for dinner:

For serious.

I DID THIS ALL BY MYSELF.*

(I’m just the smallest bit proud of myself.)

I made everything I saw on the 5 Ingredient Fix‘s Passport Picnic show, save the date shake which just sounds nasty. And I love me some dates, but dates and cream? Ick. Anyway, leave it to me to go totally unoriginal and make three courses from the same show, but let it be known I used cherries instead of apricots (thought I had them, didn’t) and goat cheese instead of feta. See? Unique is my middle name.

Left overs for the week which means no need to buy lunch. YAY.

*It looks a little bit like they’re burnt, but they aren’t. I just tried to make my lame photo look more artsy.
